The science behind behind the technique

The process of sphereifaction starts with dissolving sodium alganate and calcium lactate in two liquids (one in apple juice, the other in the water). Once the two are well mixed in their liquids, let them settle for a period of time to allow any trapped gases to release (put the apple flavored one in the fridge to settle). Next put the flavored liquid into a syringe and carefully squeeze drops of it into the water based liquid
